WINE MAKING
Harvested from our long-standing growers within the Niagara Peninsula. The juice is fermented with the skins for 14 days to develop colour, flavour and structure (tannin). Aged for 12 months in 60% French oak and 40% American oak barrels (30% new oak, 70% older oak) with full malolactic fermentation.

FLAVOUR PROFILE
Deep garnet colour with a warming bouquet of smoky oak, leather, spice, black currant, and black licorice. This Cabernet Sauvignon is medium to full-bodied with soft drying tannins. Classic notes of juicy dark fruits and sweet spices unfold on the palate. Black tea, cocoa powder, blackberry, black currant, and spicy oak notes linger on the extra dry finish.

SERVING SUGGESTIONS
Serve at a cool room temperature of 16 to 18ºC. Fabulous with grilled medium-rare red meats; beef tenderloin with roasted garlic mashed potatoes; lamb chops; roasted leg of lamb; prime rib; Avonlea Clothbound Cheddar from PEI. Enjoy now through 2029. Decanting is recommended if drinking now through 2024.
