Peller Estates Private Reserve Sauvignon Blanc 2025 VQA

WINE MAKING

Harvested from the vineyards of long-standing growers for Peller Estates that are Sustainable Winegrowing Ontario Certified. After a very gentle pressing the free-run juice is fractioned off, then cool fermented (49% in older French oak barrels, 51% in stainless steel tanks) with a unique strain of yeast called 'X5', which assists in building texture in the wine. The wines were then blended and allowed to age for a short period of time in stainless steel tanks before bottling.

FLAVOUR PROFILE

Clear and bright with fresh clean aromas of gooseberry, white peach, yellow apple, and lemongrass. An aromatic and flavourful Sauvignon Blanc. This fabulous sipping wine has refreshing flavours of juicy citrus, gooseberry, and a hint of peach. Grapefruit, lemon/lime, white currant, and green apple linger on the refreshingly dry finish.

SERVING SUGGESTIONS

Serve lightly chilled at 12 to 14ºC. Enjoy with summer pea risotto; lemon chicken with fresh herbs; pan-fried fillet of trout with dill; fresh Niagara asparagus dishes; summer salads; fresh goat cheese on salads and pizza; Margherita pizza; gazpacho; sushi; ceviche; basil pesto on pasta or chicken; tomato and herb bruschetta; spinach quiche; Tzatziki with rosemary crackers; tabbouleh. Enjoy this wine while young and fresh.
