WINE MAKING

Harvested at minus 10˚C from selected vineyard sites within the Niagara Peninsula. The naturally frozen grapes are pressed, releasing only one drop of juice per grape.The juice is cool fermented and aged in stainless steel tanks for optimum fruit concentration.

FLAVOUR PROFILE

Bright yellow gold colour with an aromatic bouquet of peach, tropical fruit, melon and honey. A rich, luscious, full-bodied Icewine with wonderful flavours of honey, tropical fruit and candied citrus. Honey, Bartlett pear and caramel notes linger exquisitely on the finish.

SERVING SUGGESTIONS

Serve chilled at 8 - 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini. Enjoy during a meal, with rich pâtés or with foie gras. Also a wonderful companion to Indian curry dishes and spicy Asian cuisine.

Enjoy with the cheese course which may include Saint André, 3 year old Canadian cheddar or creamy blue cheeses. Enjoy after a meal, with fruit based desserts of apple, pear, peach, citrus and tropical fruits. Enjoy with crème caramel, crème brûlée, custards, raisin pie, pumpkin pie, fruit breads and nut based cakes.
