Our signature Chardonnay grapes are harvested from Fruithaven Vineyard in the Four Mile Creek sub-appellation of Niagara-on-the-Lake. The free run juice is barrel fermented and aged sur lie for 10 months in 100% French oak barrels (25% new oak). Battonage (lees stirring) was carried out for four months post-fermentation to enhance flavour and texture of the wine. A small portion of the wine underwent a malolactic fermentation within barrel to round out the mouthfeel. Only 428 cases made.
Straw yellow hue with a well-integrated bouquet of yellow apple, tropical fruit, brioche, cream, butter, oak, and spice. A full-bodied, smooth, rich, and flavourful Chardonnay. Serve chilled and pair with creamy risotto, butternut squash ravioli, roasted chicken and local cheese plates.
Flavours of lemon curd, tropical fruit, and delicate spiced oak unfold on the palate. Notes of Meyer lemon, citrus sorbet, tropical fruit, spice, and oak linger on the finish.
Serve lightly chilled at 14 to 16°C. Enjoy as a cool evening sipping wine. Serve with smoked salmon risotto; creamy mushroom soup; baked butternut squash; grilled pork chops with Dijon and tarragon; cream sauces on pasta tossed with salmon, shrimp or scallops; grilled firm fillets of fish on cedar plank; roasted game hen with pine nut stuffing; turkey pot pies; smoked salmon and cream cheese appetizers. Best enjoyed now through 2025.
